Spring Salad


Meyer lemons are in season. They are less tart than regular lemons and have a rich, almost orange taste. Here is a fast salad to whip up that is very alkalinizing.
Makes one small salad (perfect for lunch!)
1/2 cucumber
1/2 meyer lemon
1/4 red onion
pepper
1 tsp. apple cider vinegar
pinch salt
fresh ground pepper
1 tsp. extra virgin olive oil

Peel off cucumber skin, cut cucumber in half and use a small spoon to scoop out seeds. Discard seeds. Slice cucumber into 1/2 inch slices
Cut meyer lemon into very thin slices, leaving the skin on. Cut the slices in half once more
Slice red onion into very thin slices as well. Soak in a bowl of warm water for 5 min. Remove, drain water.

Add cucumber, onion and lemon to a small bowl. Add vinegar, evoo, salt and pepper. Mix and store in a glass container.
